Root Beer and Pinterest.

Two weekends ago, my friend Kristen and I decided to have a day filled with pinterest – both crafty and foodie.   It was a last-minute adventure that turned into one of the best days ever! We started off with pinterest lunch recipes – Oven-baked salmon, zucchini fritters, homemade ice cream sandwiches, and IBC root beer.

Kristen set off running from the start and dove into the joy of zucchini fritters.  She pulled the recipe from seriouseats.com.  This recipe took the longest of all our lunch projects.  It required a lot of manual processing – from shredding zucchini, to letting the moisture sweat out, to forming it into patties, and frying them in olive oil.  Our biggest learning – allowing the moisture to properly come out of the zucchini shreds is extremely important.  The recipe says to wait 30 minutes to an hour, and it was right.  We just weren’t that patient.

As Kristen prepared the Zucchini, I dove into the salmon.  Personally, I was overjoyed about this dish, because I have been craving fish, and have surrounded myself with friends and family who have been marred by a seafood experience in some way.  Thankfully, Kristen and crew love fish, so all is well.  I found the recipe on pinterest that was greatly re-pinned, so I decided to give it a shot.  Basically, the recipe was salmon on a bed of lemons, with butter and spices on top.  Easy enough!  Because the fillets I bought were rather thick, it took longer than expected.  But it was so worth it!

Serving up the meal onto dishes was a delight.  The smells were overwhelmingly fantastic, the tastes were succulent, and we were all happy campers.

For dessert, we served up some homemade ice cream sandwiches, made from out-of-the-box cake batter that was cooked on a waffle iron, then filled with ice cream.  Talk about a fantastic idea! It tasted as good as it looks. Kristen's valentines wreath

After lunch, Kristen dove right into her crafty project – a nifty valentines wreath.  The supplies: A wreath, yarn to wrap the wreath, and felt for hearts.  It was an easy project that produced a beautiful finish!
